Happy Columbus Day!

I can't tell you how happy I was to have today off!  I love Monday holidays!!  I slept in until 7am which was awesome, and then got up to eat breakfast and watch Keeping up with the Kardashians while I waited for Elisabeth Hasselbeck's segment on Good Morning America.  I love watching The View so whenever I see one of the ladies on another show I try and check it out. 

For breakfast I had a whole wheat bagel thin with cream cheese and some overnight oats.  I found the recipe for that from a blog I read called "Carrots n Cake".  It's a great blog, you should check it out!  Overnight oats are basically any kind of oats you want (I use 1/4 cup old fashioned oats and a 1/4 cup of Oat Bran), 1 cup of Vanilla Soy Milk and I add raisins and cinnamon.  You make it the night before and let it soak in the fridge overnight, hence the name! 

About an hour after I ate and watched my tv I got dressed and headed to Cascades for a 5 mile run.  It was the perfect weather for it too.  I love working out first thing in the morning when I can.  I always fit it in whether it be on my lunch, or in the evening, but it's nice to have it done and out of the way so I can just relax at night, or get whatever else I need to accomplish for the day done.  If I know for sure I won't be able to fit it in before the end of my day I try to plan a meal for the night that takes 45-60 minutes to make so I can work out while it cooks.

After my run I came home and ate a protein bar.  It's important to get some kind of protein in your body at least 30-60 minutes after you work out so your body burns fat and not your muscle.  I don't ALWAYS do this, but I try to whenver possible whether it be cottage cheese, Muscle Milk Light, etc.  You have to be careful when picking out protein bars though because most are loaded with sugar, and you might as well be eating a candy bar with protein.  I like "Pure Protein" bars.  They only have 2 grams of sugar and 19 grams of protein, and I think they're so good.  I buy them at Kroger, and every couple of weeks they seem to have a special on them where they are 10 for $10.

Shortly after that I hopped in a hot shower.  The only bad part about working out this time of year is when it's cool you get sweaty, and then you get cold!  After my shower I got busy and did laundry, organized some of our closets and picked up the house.  I've been on this kick lately where I don't like clutter.  It never used to bother me, but I like things to be simple, so it seems I'm always going around rearranging and getting rid of junk we don't use anymore. 

Around noon I started getting hungry so I made myself a tuna melt and grabbed a pear, and sat down to watch The View.  I was excited because today they did a hair segment with these twin women who had curly un-ruley hair and one they taught how to use product to tame the curls, and the other they did a Keratin Straightening treament on.  I'm planning to have that treatment done next month.  I hate my curly hair and it takes me so much time to deal with it.  My hair dresser just started doing it in her salon so I thought I'd give it a shot.  They charge way less then it sounds like most of the places do. 

After lunch I got back to working around the house and preparing stuff for dinner tonight.  I got hungry for a snack after awhile so I grabbed one of my pumpkin muffins and some coffee.  I've been making the muffins alot lately, and everyone who has tried them has been spreading the recipe around.  It's a weight watchers recipe my aunt gave me last year.  It's 2 cans of pure pumpkin (not the pumpkin pie mix) and a box of any cake mix.  I've made devils food (which is my absolute fav) and spice cake.  You bake them for 45 minutes at 350 degrees.  They are guilt free muffins, which is great for someone like me who loves anything sweet.

Tonight for dinner I'm making lemon baked cod and salad.  I've been trying to eat more fruits and veggies.  Normally I'm really good about the fruit because most of it's convienient to take with you, and it tackles my sweet cravings.  One of my favorite treats is apple slices and peanut butter.  I easily go through a whole container of peanut butter on my own every 2 weeks.  When it comes to veggies however I get lazy and don't want to slice them or put any effort into it (don't ask me why!).  I like carrots and bell peppers dipped in hummus, but when I take little containers of humms with me I always leave them wherever I take them, so it gets old fast.  So almost every night at dinner I make a salad.  I use romaine lettuce, cucumbers, avocado, and whatever else I have around.  Lately I started putting feta cheese and raisins.  Sounds crazy, but it's deee-licious!  Then I top it off with oil and vinegar or italian dressing.

Well I could ramble on and on about this, but I think I'll get off here for now.  Justin should be home soon!
